Gemma Hammond who owns Pollito Loco, spoke to Paul Marsh about her life leading up to her new business.
From going to college, working in a restaurant and seeing a different side to life. Gemma Hammond has had an incredible life so far, including going on tour with bands such as Iron Maiden, Faithless and Pet Shop Boys, cooking backstage at the pyramids stage at Glastonbury and being taught by Jimmy Cliff how to cook rice and peas, to living in Spain and being inspired to start Pollito Loco.
Now looking forwards her aim is to help the future generations of chefs who don't want to do things the normal way and teach them that there is always another way to earn a living and love what you do.
